Big Belly Deli's Untrimmed Brisket Recipe

  1. Place Brisket on large piece of foil, fat side down.
  2. Paint top and sides with Big Belly Deli's 'pre rub.'
  3. Sprinkle 1 TB of Traeger Prime Rib Rub and 1 TB of Traeger Beef Rub.
  4. Turn Brisket with fat side up and repeat steps 1 and 2.
  5. Cover with foil.
  6. Set temperature at 180 and cook Brisket with FAT SIDE UP for 14-16 Hours.
  7. Refrigerate to cool, then trim thick fat.
  8. Slice at 30-35 degrees.
  9. Add Traeger BBQ Sauce when served
